一般，只要是分布均匀、未覆盖葡萄表皮本身颜色的白霜都可认为是葡萄本身分泌的糖醇类物质，也被称为果粉，对人体完全无害，是葡萄的“保护神”。由于糖醇类不溶于水，它可避免葡萄表面吸附水分形成湿润的环境，从而导致病菌滋生和侵染，也可防止葡萄采摘后失水速度过快而皱缩。另外，白霜中富含的葡萄酒酵母还 可防止制作葡萄酒过程中受到微生物污染。所以，挑选葡萄时，不要故意避开有白霜的葡萄，有时候白霜的多少可以作为衡量葡萄质量的一个重要指标。
